You may want to add birthday field to an existing card, and to do so you open the card you want to add Birthday to in Address Book and click Edit button at the bottom of the card to start editing. Then go to Card menu and click Add Field and then Birthady. Adjust birthday as necessary and click Edit button once more to finish editing.
To make birthday field appear automatically when you create a new card, you should edit the template for Address Book cards. To do this, go to Address Book menu, and choose Preferences, then click Templates. Then in the Add Field selector click Birthday and that is all!
